It is most frequently used for the pe-tsai (transliterated in the pinyin system báicài, literally ‘white vegetable’), an elongated pale green cabbage (Brassica pekinensis) that looks rather like a cos lettuce, and can be eaten raw in salads or cooked. It is also known as Pekin cabbage or snow cabbage.
Although the terms "petsai" and Chinese cabbage are often used synonymously petsai is in fact one of two types of Chinese cabbage, the other being pakchoi.
